A vibrant Thai street-food classic made with crisp green papaya, long beans and carrot, tossed in a bold hot-and-sour dressing of lime, tamarind, fish sauce and palm sugar. Pounded gently in a mortar to release flavour and soften the vegetables, the salad is finished with dried shrimp, peanuts and fresh chillies for a perfect balance of crunch, heat and brightness

Ingredients

Green papaya 2 lb 900 g Julienne
Long beans 2 lb 900 g Blanched cut in 1 1/2 inch lengths
Carrot 4 tbsp 60 ml Large, cut in half
Cherry tomatoes 2 tsp 10 ml Cut into 3 to 4 pieces
Thai chilis 2 tsp 10 ml Minced cut into 3 to 4 pieces
Garlic cloves 6 cup 1 1/2 ml
Dried shrimp, small 6 cup 1 1/2 ml
Tamarind juice 2 cup 500 ml Juice
Limes 6 tbsp 30 ml
Palm sugar 6 tsp 10 ml Melted with 1tsp (5ml) of water into a thick sirup and used as necessary to balance the sour flavor

Method

  1. Prepare ingredients and divide into 3–4 smaller batches for easier mixing.
  2. Using a deep clay mortar and wooden pestle, pound garlic and Thai chilis together until a rough paste forms.
  3. Add dried shrimp and lightly pound to bruise. Spoon in tamarind juice, lime juice, fish sauce and palm sugar syrup; stir to combine.
  4. Add long beans and pound lightly a few times to soften.
  5. Add julienned green papaya and carrot. Gently bruise and toss to coat evenly with the dressing. Taste and adjust seasoning if needed with more lime, fish sauce or palm sugar.
  6. Add tomato pieces and lightly bruise to incorporate. Transfer to a serving plate and sprinkle generously with roasted peanuts.
  7. To serve: Steamed sticky rice Plain rice Grilled chicken or plant-forward proteins Fresh salad greens, cabbage or water spinach
