| Palm sugar | 6 tsp | 10 ml | Melted with 1tsp (5ml) of water into a thick sirup and used as necessary to balance the sour flavor |
Method
- Prepare ingredients and divide into 3–4 smaller batches for easier mixing.
- Using a deep clay mortar and wooden pestle, pound garlic and Thai chilis together until a rough paste forms.
- Add dried shrimp and lightly pound to bruise. Spoon in tamarind juice, lime juice, fish sauce and palm sugar syrup; stir to combine.
- Add long beans and pound lightly a few times to soften.
- Add julienned green papaya and carrot. Gently bruise and toss to coat evenly with the dressing. Taste and adjust seasoning if needed with more lime, fish sauce or palm sugar.
- Add tomato pieces and lightly bruise to incorporate. Transfer to a serving plate and sprinkle generously with roasted peanuts.
