Ingredients

Medium tomatoes 2 each Halved
Olive oil 1 tbsp 5 ml
Small onion 1 each Chopped
Garlic clove 1 each Minced
vegetable broth 1 cup 250 ml
dried basil 1/2 tsp 10 ml (or 3–4 fresh basil leaves)
Salt and pepper To taste
Fresh basil 1 tbsp 5 ml Chopped (for garnish)
Microgreens 1/4 cup 62,5 ml (for garnish)
Whole wheat baguette 1 each Sliced into 2 pieces (for crostini)
Garlic clove 1 each Cut in half (for rubbing on crostini)
olive oil 1 tsp 20 ml  (for brushing crostini)

Method

  1. Preheat the oven to 400°F (200°C).
  2. Place the tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20–25 minutes until soft.
  3. While the tomatoes are roasting, heat 1 tbsp olive oil in a saucepan. Add the chopped onion and sauté until translucent, about 3–4 minutes.
  4. Add minced garlic and sauté for another minute.
  5. Once the tomatoes are roasted, add them to the saucepan with the sautéed onions and garlic. Add vegetable broth and dried basil.
  6. Simmer for 10 minutes to blend the flavours, then use an immersion blender to blend the soup smooth (or blend in batches in a regular blender).
  7. Toast the baguette slices with a little olive oil in the oven or on a skillet until golden. Rub each slice with the cut garlic.
  8. Serve soup in a bowl, garnished with fresh basil, microgreens, and alongside the garlic crostini.
