Method
- Preheat the oven to 400°F (200°C).
- Place the tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20–25 minutes until soft.
- While the tomatoes are roasting, heat 1 tbsp olive oil in a saucepan. Add the chopped onion and sauté until translucent, about 3–4 minutes.
- Add minced garlic and sauté for another minute.
- Once the tomatoes are roasted, add them to the saucepan with the sautéed onions and garlic. Add vegetable broth and dried basil.
- Simmer for 10 minutes to blend the flavours, then use an immersion blender to blend the soup smooth (or blend in batches in a regular blender).
- Toast the baguette slices with a little olive oil in the oven or on a skillet until golden. Rub each slice with the cut garlic.
- Serve soup in a bowl, garnished with fresh basil, microgreens, and alongside the garlic crostini.
