Bolón de Verde is a traditional Ecuadorian comfort dish made from mashed green plantains, enriched with butter and salt, folded with crumbly queso fresco, then shaped into balls and fried until golden. Crisp on the outside and soft within, bolón is deeply savoury, hearty and satisfying — often enjoyed as breakfast, a snack, or a side dish.
